However, as you say, we always tend to go with Ever-est, even though I know that the man himself was Eve-rest.
Yes, I remember my Latin, but assumed "Point Nemo" was pronounced the anglicised way (whether named after Verne's character or the animated clownfish, I don't know!).When I was at Disneyworld, the ride said Neemo, but if it's Latin, it should be Naymo...
